Beefsteak and Kidney Pie

1 lb. of stewing steak
1 Sheep's kidney or 1/4 lb. of ox kidney
1 dessertspoon of plain flour
1 teaspoon of salt
1/4 teaspoon of pepper
1 gill stock or water
1 lb. of flaky pastry

1. Prepare a moderately hot oven (430 F)
2. prepare the pastry
3. Wash kidney in tepid water and cut into small pieces removing the core.
4. Wash the steak and cut into thin slices.
5. Mix flour and seasonings. Dip steak in the seasoned flour and cook in a saucepan with the kidney for 1 1/2 hours. Allow to cool and transfer to a piedish.
6. Roll out psatry to about 1/2 inches thick. Moisten edge of dish and lay on strip of pastry. Trim, glaze with egg and decorate as desired.
7. Cut hole in the middle of the pastry.
8. Bake about the middle of the oven for about 40 minutes. Serve hot.
