Yorkshire Pudding

4 oz. of plain flour
2 eggs
1/2 pint of milk
1/4 teaspoon of salt
2 tablespoons of fat or dripping

1. Sieve the flour and salt. Place the eggs and half of the milk in a basin. Add the flour and mix well to a smooth batter.
2. Add the remainder of the milk gradually and whisk for about 5 minutes.
3. Let stand well covered for about 1-2 hours.
4. Prepare moderately hot oven (425-450 F)
5. Heat the fat in a Yorkshire or Roasting tin.
6. Whisk the batter for a further few minutes before pouring into the smoking hot fat.
7. Bake near the top of the oven for about 35 minutes.
